Ever have a craving for Chocolate Zucchini Bread? No? Just me? More for me then because you are missing out. Banana bread is the old stand-by. And yes, it is also delicious. But sometimes, you get a bumper crop of zucchini and what are you going to do? There are only so many times you can have grilled zucchini or noodles. So how about you try something new? Shake it up a bit.
This is a yummy version of zucchini bread. Bake some up. Have a warm slice with a cup of coffee. It makes two loaves, so spread the love and share with a friend.
Ingredients:
2 1/2 cups flour
1/3 c cocoa powder
1 Tbs baking powder
1 Tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
3 large eggs
1 cup vegetable oil
1 cup sugar
1 Tbs vanilla
3 cups shredded zucchini
1 1/4 cup semi sweet chocolate chunks
Instructions:
Preheat oven to 350F and spray (Pam Baking works well) 2 8x4” loaf pans. If it looks a little wet, add more flour to dust the pan.
In a large bowl, whisk together the eggs, vegetable oil, sugar and vanilla. Stir in the zucchini. Add the flour, cocoa powder, baking powder, baking soda, salt, cinnamon and nutmeg, stir until just combined. It might be a little lumpy, don’t overmix. Add chocolate chips last, save a few to sprinkle on top.
Divide evenly between two loaf pans. Bake for 45-60 minutes or until a knife or toothpick come out clean. Remove from oven and cool.
