Everyone is watching their macros. Well, maybe you need a little morning or afternoon snack to get some protein in or some extra calories. If that’s the case, look no further. Here is a recipe for some quick and easy egg white bites. You can keep them on hand for a few days or freeze them. With snacks like these, you’ll reach your goals in no time.
Easy Egg White Bites
Ingredients
1 1/2 cups of egg white (carton or separated eggs)
1 1/4 cup low fat cottage cheese
1 cup crumbled turkey sausage
1 cup shredded Monterey Jack cheese
3 Tbs butter, melted and cooled
2 Tbs cornstarch
1/2 tsp salt
1/2 tsp pepper
1 tsp hot sauce
4 Tbs diced bell peppers, any color
2 green onions sliced thinly
Instructions
Preheat oven to 300 deg F. Make a hot water steam. . .fill a 9x13 pan with boiling hot water. Put this pan on the lowest rack in the oven.
Spray a non stick standard muffin pan with cooking spray.
Place egg whites, cottage cheese, cheese, butter, cornstarch, salt and hot sauce in a bowl. Using an immersion blender, mix ingredients until smooth. Alternatively, you can put above ingredients in a blender and blend until smooth.
Pour egg mixture into prepared muffin pan, filling each until almost full. Sprinkle turkey sausage crumbs, peppers, and green onions in each muffin cup. Stir slightly to mix into each muffin.
Bake for 20-25 minute in the center of the oven until set. Remove pan from oven when done and let rest in pan for about 5 minutes. Loosen and remove from pan. These can be eaten warm immediately. You can refrigerate them in an airtight container for up to 3 days. Freeze them for 2 months.

Or diced ham, shredded cheddar and green onions
Or maybe, ham, diced peppers, onions and cheddar for a western omelet flare.
